Dark Forest Chocolate, Western New York's only bean-to-bar chocolate maker, has won three prizes in an international chocolate competition.
Dark Forest, 11 W. Main St., Lancaster, had three products honored in this year's International Chocolate Awards. Its Dark Bolivian 75 percent, 50 percent Dark Milk, and 55 percent Goat Milk chocolate bars received silver awards.
The London-based awards are administered by the Academy of Chocolate, which considered more than 1,000 bars in its 2017 contest.
Dark Forest, owned by Joanne and Dan Sundell, opened in 2015. Most chocolatiers use bulk chocolate in their confections. Chocolate makers such as Dark Forest roast and grind cocoa beans themselves, aiming to present more subtle and distinctive flavors, like coffee roasters.
Dark Forest is available at its Lancaster store, the Washington Market, White Cow Dairy and Farm Shop, and the Burchfield Penney Art Center gift shop.
